Knife Blog - Hospo



Find the following knives and state what they are used for.

1. Paring

- It is used for peeling and chopping fruits and vegetables.

2. Chefs

- It is used for mincing, slicing, chopping vegetables, slicing meat, and disjointing large cuts.

3. Turning

 -  It is used to slice soft fruits such as nectarines, plums, or peaches. It may also be used for cutting decorative garnishes such as rosettes in radishes or fluted mushrooms.

4. Boning

- It is used to remove the bones and joints to make thin and precise cuts.

5. Carving

 - It is used to carve thin uniform slices from cooked poultry like chicken or turkey, and to slice large roasts of meat.

6. Filleting

- It is used to fillet and prepare fish.

7. Bread

- It is used for cutting bread.

Importance of Knife Storage 

It is important for having storage for all the knives in the kitchen to keep the kitchen organized and safe.


Importance of having Different Cutting Boards




Having a proper cutting board is important because it keeps a knife from going dull too soon. There are different kinds of cutting boards for different ingredients.

Yellow - the yellow cutting board is for raw poultry like chicken.
White - the white cutting board is for dairy products like cheese and butter.
Green - the green cutting board is for vegetables and fruits.
Red - the red cutting board is for raw meat.

It is important to know what cutting board to use when it comes to cutting the ingredients so that we will avoid cross-contamination and remain the cleanliness of the place.

Sharpening of Knives

It is important to keep the sharp edge on your blade for our own safety. There are two ways on how to sharpen a knife.

1. Grinding - this process is basically the removal of metal.
2. Honing - this is where a small amount of material is removed from the surface by the means of abrasive stones. After having the right shape and while using an aggressive grit, switch to a finer grit to hone the edge.

Setting up the station

Once we go inside our station, we only get the cutting boards or knives that are needed for our ingredients. It is important to keep our place tidy and safe to avoid accidents, especially on knives.
